Indian Mixed Grill
- 4 Japanese eggplant, sliced
- 1 bell pepper, sliced
- 1 large onion, cut into 8 wedges
- 1/4 cup olive oil
- 2 Tbs. lemon juice
- 2 tsp. garam masala
- 2 cloves garlic, minced (2 tsp.)
- 1 1/2 tsp. ground cumin
- 1/2 tsp. grated fresh ginger
- 4 green onions, finely chopped
- 1 large tomato, finely diced
- 1 cup plain low-fat yogurt
- 1/2 cup chopped fresh mint
- 1/4 tsp. grated fresh ginger
- To make Vegetables: Toss together all ingredients in bowl.
- Season with salt, if desired.
- Let stand 15 minutes.
- To make Raita: Stir together all ingredients in medium bowl.
- Preheat grill or grill pan over medium heat.
- Grill bell peppers 8 minutes, onion 6 minutes, and eggplant 5 minutes.
- Serve with Raita.
