Indian Mixed Grill

  1. To make Vegetables: Toss together all ingredients in bowl.
  2. Season with salt, if desired.
  3. Let stand 15 minutes.
  4. To make Raita: Stir together all ingredients in medium bowl.
  5. Preheat grill or grill pan over medium heat.
  6. Grill bell peppers 8 minutes, onion 6 minutes, and eggplant 5 minutes.
  7. Serve with Raita.
