Danish Potatoes
- 1 lb. very sm. new potatoes, washed
- 3/4 cup dark brown sugar, packed
- 1/2 stick butter
- Salt and pepper, to taste
- Fresh chopped parsley (for garnish)
- In a medium pot boil the potatoes until almost fork tender about 7-8 minutes.
- Pour off the water and let cool enough to handle.
- Then peel the potatoes and set aside.
- In a medium to large pan, melt the butter over medium low heat.
- Add the dark brown sugar; stir and let heat through.
- Raise the heat a little (you are trying to almost make caramel).
- When slightly thick add the cooked new potatoes.
- Stir and cover the potatoes with the caramel sauce.
- Salt and pepper to taste and garnish with the chopped parsley.
