Greek Style Shrimp With Pasta Recipe
- 8 ounce. fusilli or possibly rotelle pasta
- 3 scallions, minced
- 2 cloves garlic, minced
- 1 tbsp. extra virgin olive oil
- 1 can tomatoes, liquid removed & minced
- 2 teaspoon dry basil
- 1/2 teaspoon oregano
- 1/4 teaspoon red pepper
- 1/4 teaspoon salt
- 1 pound uncooked med. shrimp, peeled & deveined
- 1/3 c. crumbled feta cheese
- Cook pasta according to package directions.
- Meanwhile, in large skillet over medium high heat, saute/fry scallions and garlic in oil for one minute, stirring frequently.
- Stir in next 6 ingredients; cook for 5 min, stirring occasionally.
- Add in shrimp, stir for 3 or possibly 4 min, or possibly till cook through.
- Remove from heat.
- Drain pasta; divide pasta and shrimp sauce.
- Top with feta cheese.
