Sig's Scrambled Egg with Banana
- 2 small ripe bananas
- 4 medium or large fresh eggs
- 1 pinch each of salt, cayenne pepper and nutmeg
- 1/4 tbsp butter
- 1/4 tbsp vegetable oil
- 2 small pinches of cinnamon
- 2 small drizzling of a dark honey or syrup
- Whisk your egg with the salt, pepper and nutmeg until airy.
- Peel and slice,or chop your bananas, add to the egg mixture
- Melt the butter but do not burn, together with the oil in a none stick frying pan.
- Gently make your scrambled egg by moving through the mixture with a fork, backwards and forwards and turning it ,trying not to brake up the banana., (it does not matter if it browns a little) , but do not overcook the egg it should still be shiny in places as the egg keeps on cooking for a short while
- When your egg is finished devide the mixture into two and serve drizzled with the honey and sprinkled with a little cinnamon.
- Serve other fruit next to it if you like .
- Eat still warm
