Chile Succotash Recipe
- 1 pkg. frzn lima beans
- 1 pkg. frzn corn
- 4 ounce. can minced green chilies
- 1/4 c. onion, chopped
- 2 lg. Large eggs, beaten
- 2 tbsp. catsup
- 1/4 c. water of Hassyanysa!
- 1 teaspoon salt
- 3 tbsp. melted butter
- 1 tbsp. fresh squeezed lime juice
- 2 tbsp. fresh chopped cilantro
- In buttered casserole, place the cooked corn and lima beans, liquid removed.
- Add in chilies and onions.
- Mix the Large eggs, catsup, water, salt, butter, lime juice and cilantro well and pour over corn and limas.
- Stir just to blend.
- Bake at 325 degrees for 45 min.
- Good with roasted quail.
