Haloumi Rolls with Oregano and Lemon Philly*
- 125g PHILADELPHIA Light Spreadable Cream Cheese
- 1 tablespoon grated lemon rind Safeway 4 ct For $5.00 thru 02/09
- 1 tablespoon finely chopped oregano leaves
- salt and pepper, to taste
- 2 teaspoons olive oil
- 200g Haloumi cheese, cut into 4 slices
- 4 Turkish rolls, split and toasted
- 40g baby spinach leaves
- 4 large slices grilled eggplant
- 1/2 red onion, thinly sliced
- Combine Philly*, lemon rind, oregano and seasonings until smooth.
- Set aside.
- Heat oil in a large non-stick frying pan over high heat.
- Cook the haloumi for 2-3 minutes each side until golden.
- Spread the Philly* mixture evenly over the base of each roll.
- Top with spinach, eggplant, onion, haloumi and roll lid.
- Serve.
