Haloumi Rolls with Oregano and Lemon Philly*

  1. Combine Philly*, lemon rind, oregano and seasonings until smooth.
  2. Set aside.
  3. Heat oil in a large non-stick frying pan over high heat.
  4. Cook the haloumi for 2-3 minutes each side until golden.
  5. Spread the Philly* mixture evenly over the base of each roll.
  6. Top with spinach, eggplant, onion, haloumi and roll lid.
  7. Serve.
