Lower Fat Lasagne
- 1 lb lean ground chicken
- 1 cup onion, chopped
- 2 garlic cloves, chopped
- 2 teaspoons oregano, crushed
- 2 (10 ounce) cans Healthy Request condensed tomato soup
- 12 cup dry white wine
- 2 teaspoons wine vinegar
- 12 lb lasagna noodle
- 1 pint fat-free cottage cheese
- 8 ounces part-skim mozzarella cheese, grated
- Brown beef, add onion, garlic and oregano.
- Season with salt and pepper.
- Cook until onion is done.
- Add soup, wine, and vinegar.
- Simmer 30 minutes.
- Stir now and then.
- Cook noodles according to the package.
- In a 9x13 baking dish, put a small amount of sauce in the bottom.
- Arrange 3 alternate layers of noodles, ricotta cheese, meat sauce, and noodles.
- Sprinkle with Parmesan cheese.
- Bake at 350F for 30 minutes.
- Let stand 15 minutes before serving.
