baked gnocchi with spinach and ricotta

  1. preheat oven to 400.
  2. cook gnocchi according to package directions.
  3. add spinach during last 2 minutes of cooking.
  4. When gnocchi is done, drain well.
  5. meanwhile, for the sauce, combine all ingredients in saucepan and simmer over medium heat.
  6. spray 2 quart baking dish with non stick cooking spray.
  7. combine gnocchi/spinach with sauce and ricotta.
  8. pour into prepared baking dish and top with shredded cheese.
  9. bake 20 minutes or until bubbly and golden.
