White Chocolate Berry Muffins
- 1 (8 ounce) package cream cheese
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 12 cups flour
- 1 teaspoon baking powder
- 12 teaspoon salt
- 1 cup fresh raspberry
- 12 cup white chocolate chips
- beat cream cheese and sugar together until blended.
- add eggs one at a time.
- stir in vanilla extract.
- in a seperate bowl, combine flour, baking powder and salt.
- add dry mix to cream cheese mix until well blended.
- fold in raspberries and chips.
- preheat oven to 375 degrees.
- fill paper-lined muffin cups 2/3 full with batter.
- bake 20-25 minutes.
- serving and bake time vary with size of muffins- for mini-muffins, bake for approx 10-12 minutes depending on oven strength.
