Goat Cheese, Walnut, and Tomato Sandwich
- 2 slices whole grain bread, toasted
- 1 ounce spreadable goat cheese
- 1 ounce walnuts (optionally toasted)
- 1 -2 tomatoes, slices
- lettuce or other salad greens
- salt and pepper
- Spread the goat cheese on one slice of the toast and sprinkle the walnuts evenly over it.
- Layer on the tomato slices and lettuce.
- Salt and pepper to taste.
- Top with the other slice of toast.
