Greek Stuffed Mushrooms

  1. Drain spinach in colander and press out all liquid.
  2. In a mixing bowl, combine spinach, cheeses, onion, parsley and salt.
  3. Mix well.
  4. Mound mushroom caps high with spinach mixture.
  5. Arrange on serving plate and microwave on high until steaming, approximately 3-4 minutes.
