Beef with Gorgonzola Sauce
- 1 whole Fillet Of Beef- 4 To 5 Pounds, Trimmed
- 1/2 cups Stone Ground Mustard
- 4 pinches Kosher Salt To Taste
- 4 pinches Pepper To Taste
- 6 ounces, weight Gorgonzola Cheese
- 8 ounces, weight Cream Cheese, Softened
- 1/2 cups Mayonnaise
- 1/2 cups Sour Cream
- 1 bunch Green Onions, Trimmed And Sliced
- 1 teaspoon Kosher Salt
- 1/4 teaspoons Worcestershire Sauce
- Place beef on a cookie sheet.
- Mix the salt, pepper and mustard together.
- Using your hands, coat the beef with this mixture.
- Roast in a 400 degree oven for 40 minutes (medium to medium rare).
- Remove meat from the oven and tent with aluminum foil.
- Let sit for 15 minutes.
- For the Gorgonzola sauce, place cheese in a food processor, using the metal blade, process.
- Add the cream cheese, mayo, sour cream, onions, salt, pepper (to taste), and Worcestershire sauce.
- Process until smooth.
- Serve the sauce at room temperature.
