Cranberry Waldorf Salad
- 1-1/3 cups (edamame) (remove beans from pods if purchased whole)
- 1/2 cup KRAFT Mayo Fat Free Mayonnaise Dressing
- 1 Tbsp. honey
- 1/4 cup lemon juice Safeway 4 ct For $5.00 thru 02/09
- 1 tsp. paprika
- 4 medium apples, cored and cut into 1-inch pieces Safeway 1 lb For $0.99 thru 02/09
- 4 celery stalks, chopped
- 1/2 cup dried cranberries
- 4 cups chopped romaine lettuce
- 1/2 cup PLANTERS Walnuts, chopped
- 32 fl oz (4 cups) fat-free milk
- Cook soybeans as directed on package; cool.
- Blend mayonnaise, honey, lemon juice, and paprika in a small bowl.
- Add apple chunks and toss.
- Add celery, cranberries and soybeans; mix.
- Arrange 1 cup chopped lettuce on each of 4 plates and top with one quarter of salad mixture.
- Sprinkle each salad with 2 Tbsp.
- walnuts.
- Serve each person an 8 fl oz glass of milk with the meal.
