Profitrolle-Chocolate Cream Puffs - Profiteroles

  1. In saucepan, combine butter, water, and salt; bring to boil.
  2. Add flour all at once, stirring vigorously.
  3. Cook and stir until dough forms a ball that doesn't separate.
  4. Remove from heat.
  5. Cool 10 minutes.
  6. Add eggs, one at a time, beating thoroughly with a wooden spoon after each addition.
  7. Dough should be shiny and smooth.
  8. Drop by tsp-sized balls onto greased baking sheet.
  9. Bake at 400 degrees (200 C.) for 20 minutes or until golden.
  10. Remove from oven.
  11. Split each Profiterole for steam to escape.
  12. Remove soft dough from inside.
  13. Cool on wire rack.
  14. Fill each Profiterole with cream and/or pudding.
  15. Place on serving plate.
  16. Melt chocolate, butter and corn syrup over low heat.
  17. Pour over Profiteroles.
  18. Serve immediately.
