Chipotle Chili
- extra-lean ground beef Safeway 1 lb For $5.99 thru 02/09
- 1-1/2 qt. onions, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 4-1/2 cups celery, chopped
- 7-1/2 cups red peppers, chopped
- 1-1/2 qt. green peppers, chopped
- 6 Tbsp. canned chipotle peppers in adobo sauce, pureed
- 6 Tbsp. chili powder
- 1 Tbsp. garlic, minced
- 5-1/4 qt. canned no-salt-added diced tomatoes, undrained
- 3 qt. canned no-salt-added red kidney beans, rinsed, drained
- 1-1/2 cups Kraft Shredded Cheddar/Monterey Jack Blend Cheese
- 3/4 cup fresh cilantro, chopped
- Brown meat with onions in large saute pan on medium-high heat; drain.
- Add celery, red peppers and green peppers; cook 10 min.
- or until crisp-tender, stirring occasionally.
- Stir in chipotle peppers, chili powder and garlic; cook 1 min.
- Add tomatoes and beans; stir.
- Bring to boil; cover.
- Simmer on medium-low heat 30 to 45 min., stirring occasionally.
- Serve topped with cheese and cilantro
