Turkey Salad with Hot Bacon Dressing

  1. Drain pineapple, reserving 2 tbsp.
  2. juice for dressing; set aside.
  3. Combine pineapple and next 4 ingredients in a large bowl.
  4. Cook bacon in a small skilet until crisp; drain and set aside.
  5. Reserve 1-1/2 tsp.
  6. drippings in skillet.
  7. Stir in 2 tbsp.
  8. reserved pineapple juice, vinegar, sugar, salt, and pepper.
  9. Cook over low heat, stirring until sugar dissolves.
  10. Pour over salad, and toss well.
  11. Sprinkle with bacon.
  12. Serve immediately.
