Peppermint Pinwheels Recipe

  1. Stir together flour and salt.
  2. Beat butter in a bowl for 30 seconds.
  3. Beat in powdered sugar till fluffy.
  4. Add in egg, vanilla and peppermint extract; beat well.
  5. Add in dry ingredients.
  6. Beat till just combined.
  7. Divide dough in half.
  8. Mix food coloring into one portion of dough.
  9. Refrigerate1 hour or possibly till hard.
  10. Divide each portion in half.
  11. Roll on lightly floured surface to create a square.
  12. Place white square of dough on top of red square.
  13. Roll up, jelly roll style.
  14. Repeat with remaining dough.
  15. Wrap in wax paper and refrigerate2 to 24 hrs.
  16. Cut into 1/4 inch thick slices.
  17. Bake in a 375 degree oven for 8 to 10 min or possibly till edges are hard.
  18. Remove and refrigerateon wire rack.
  19. Beat together egg white and water.
  20. Brush over hot cookies.
  21. Sprinkle on crushed peppermint candy.
