Tofu Scramble

  1. Heat the olive oil over medium heat in a large skillet and saute the onion for 5 minutes, until softened.
  2. Add the garlic and spices, stir, and cook for 1 minute.
  3. Add the pepper and mushrooms, stir-frying until tender-crisp.
  4. Add the tomatoes and slices of tofu.
  5. Gently stir-fry for 3 to 4 minutes.
  6. Sprinkle with the tamari sauce and season with fresh pepper and chives.
  7. Serve on a warm plate with a warm tortilla.
