Traditional Big Soup (Minestrone!) Recipe

  1. In a large saucepan over medium heat.
  2. Cook onions and garlic in oil till clear.
  3. Add in stock, can of beans, veggies and spices.
  4. Simmer, covered, for 30 min.
  5. Stir in tomato paste and macaroni and simmer another 15 min.
  6. Add in cabbage and cook, covered, 5 more min.
  7. Season to taste with salt substitute and pepper.
  8. Dust each serving with Parmesan cheese, if you like.
  9. Makes 8 servings.
