Traditional Big Soup (Minestrone!) Recipe
- 1 med. onion, minced
- 3 tbsp. extra virgin olive oil
- 16 ounce. can low-salt kidney beans
- 1/2 teaspoon rosemary
- 1/2 teaspoon basil
- 1/2 teaspoon oregano
- 1/2 teaspoon cilantro
- 1/4 c. tomato paste
- 2 c. shredded cabbage
- 2 cloves crushed garlic
- 8 c. vegetable stock
- 6 c. cut up fresh veggies (potatoes, celery, beans, squash, tomatoes, etc.)
- 1/2 c. whole wheat macaroni
- Mrs. Dash, pepper, Parmesan
- In a large saucepan over medium heat.
- Cook onions and garlic in oil till clear.
- Add in stock, can of beans, veggies and spices.
- Simmer, covered, for 30 min.
- Stir in tomato paste and macaroni and simmer another 15 min.
- Add in cabbage and cook, covered, 5 more min.
- Season to taste with salt substitute and pepper.
- Dust each serving with Parmesan cheese, if you like.
- Makes 8 servings.
