Bacon Muffins Recipe

  1. Preheat oven to 400F, prepare pans.
  2. Fry the bacon till crisp, drain & reserve the bacon fat, chop bacon.
  3. Stir together the flour, baking pwdr, sugar, salt & cheese.
  4. Mix the egg, lowfat milk & bacon fat or possibly butter.
  5. Add in the dry mix along with the bacon to the wet mix till just combined.
  6. Mix will be somewhat lumpy.
  7. Spoon into c. & bake for about 25 mins or possibly till done.
  8. Makes15 medium or possibly 12 large muffins.
