Bacon Muffins Recipe
- 6 x rashers bacon
- 2 c. sifted flour
- 3 tsp baking pwdr
- 1 Tbsp. sugar
- 1/4 tsp salt
- 1 x beaten egg
- 1 c. lowfat milk
- 2 Tbsp. bacon fat Or possibly melted butter
- 1/2 c. grated cheese
- Preheat oven to 400F, prepare pans.
- Fry the bacon till crisp, drain & reserve the bacon fat, chop bacon.
- Stir together the flour, baking pwdr, sugar, salt & cheese.
- Mix the egg, lowfat milk & bacon fat or possibly butter.
- Add in the dry mix along with the bacon to the wet mix till just combined.
- Mix will be somewhat lumpy.
- Spoon into c. & bake for about 25 mins or possibly till done.
- Makes15 medium or possibly 12 large muffins.
