Spicy Mayo Potato Salad
- 3 lb yukon gold potatoes
- 2/3 C spicy sushi mayo (see my recipes)
- 1 stalk celery; small dice
- 1/2 red bell pepper; small dice
- 1/2 green bell pepper; small dice
- 1 bundle scallions; minced
- 2 shallots; minced
- 1 large pinch kosher salt and black pepper
- Boil potatoes in cold salted water until easily pierced with a paring knife.
- Drain.
- Cool in refrigerator.
- Cut into fourths.
- Combine all ingredients together in a large mixing bowl.
