Pasta Bean Casserole Recipe Sandsquish
- 2 tablespoons olive oil
- 1 small onion, diced
- 1 clove garlic, minced
- 1 can (16 ounces) white beans
- 1 can (8 ounces) tomato sauce
- 1 cup tiny pasta shells
- 1 cup water
- 2 teaspoons instant chicken or vegetable bouillon, optional
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried basil
- 1 cup frozen peas
- 1/2 cup shredded cheese
- Combine oil, onion and garlic in a 2 1/2-quart microwave-safe casserole.
- Cover and cook with 650 watts, stirring once halfway through, for 3 minutes.
- Add the beans with their liquid, the tomato sauce, pasta shells, water, bouillon and seasonings.
- Cover and microwave with 650 watts until pasta is tender, 14 to 18 minutes.
- Stir in peas and cheese and let stand 5 minutes.
