Seafood New Orleans

  1. Cook and stir onion and green pepper in shortening in steam-jacketed kettle or heavy saucepot until tender but not brown.
  2. Add tomatoes, barbecue sauce, parsley and salt; stir.
  3. Cover; simmer 15 minutes.
  4. Add shrimp; cook an additional 10 minutes, stirring occasionally.
  5. Serve over rice.
  6. Garnish with additional chopped fresh parsley, if desired.
