Lobster Roll Cups
- 2 cups Cooked Lobster Meat, Chopped
- 2 Tablespoons Mayonnaise
- 2 Tablespoons Finely Diced Celery
- 1 Tablespoon Lemon Juice
- 1 teaspoon Lemon Zest
- 24 whole Phyllo Shells
- 1 dash Cayenne Pepper
- In a medium bowl, gently stir the lobster meat, mayonnaise, celery, lemon juice, and zest to combine.
- (Note: The mixture can be made a few hours ahead of time and refrigerated before placing in phyllo cups.)
- Place 1 heaping teaspoon of the lobster mixture into each phyllo cup.
- Sprinkle a small amount of cayenne pepper on the top of each cup if desired.
- Serve immediately.
