Uwajimaya Long Grain Fried Rice
- 3 tablespoons oil
- 2 eggs, beaten
- 3 slices bacon, cut in 1-inch pieces
- 12 cup pork or 12 cup chicken or 12 cup shrimp (cooked and diced) or 12 cup ham (cooked and diced)
- 1 cup bean sprouts
- 3 cups long grain rice, cooked and cooled
- 2 -3 tablespoons soy sauce
- 1 small onion, diced
- 1 green onion, chopped
- Heat 1 Tblsp.
- oil in the wok and scramble eggs.
- Remove and set aside.
- Fry bacon until most of fat is cooked out.
- Drain excess fat and replace with 2 Tblsp.
- oil.
- Add cooked meat, onions and beansprouts.
- Stir fry for 1 minute.
- Add rice and soy sauce.
- Fry until rice is hot, turning temperature down if necessary.
- Add eggs and mix in with rice.
- Toss in green onions.
