Baked Grits

  1. Preheat oven to 400 degrees F.
  2. Mash grits until smooth, if they are leftovers.
  3. Add melted butter, eggs, and evaporated milk.
  4. Then add 1 1/2 cups grated cheese, reserving 1/4 cup for the topping.
  5. Combine thoroughly.
  6. Add paprika and cayenne.
  7. Pour mixture into a buttered casserole.
  8. Bake for 25 to 30 minutes or until brown.
  9. Sprinkle with remaining grated cheese and more paprika.
  10. Return to oven and cook a few minutes more, until topping has melted.
