Spinach and Bacon Salad
- 2 rashers rindless bacon, chopped Rite Aid 2 For $7.00 thru 02/06
- 200g baby spinach leaves
- 1/2 punnet cherry tomatoes, halved
- 1 medium avocado, stone removed peeled and sliced Target 10 ea For $10.00 thru 02/06
- 3 eggs, hard boiled and chopped
- 1/3 cup KRAFT Italian Dressing
- season with black pepper and nutmeg
- Garnish
- 1 tablespoon pine nuts, toasted
- Pan fry bacon until golden brown and crisp.
- Drain on absorbent paper.
- Place spinach leaves on a serving platter.
- Top with hot bacon, tomatoes, avocado and egg.
- Drizzle with dressing and garnish with toasted pine nuts.
