Mini Chocolate Chip Cheesecakes
- 1 package (16.5oz) Refrigerated Chocolate Chip Cookie Dough, Sliced
- 2 packages (8oz. Each) Cream Cheese, Room Temperature
- 1 can (14oz) Sweetened Condensed Milk
- 2 whole Large Eggs
- 2 teaspoons Vanilla Extract
- 2 cups Miniature Semisweet Chocolate Chips
- Preheat oven to 325F.
- Paper-line 24 muffin cups.
- Place one slice of cookie dough in each cup.
- Bake for 10-12 minutes, or until cookie has spread to edges of the cup.
- Meanwhile, beat cream cheese, condensed milk, eggs and vanilla until smooth.
- Add chocolate chips.
- Pour about 3 Tablespoons of this mixture over each cookie.
- Bake for 15-18 minutes or until set.
- Cool completely on wire rack.
- Refrigerate for at least 1 hour before eating.
- **The amount of chocolate chips listed is just an estimate.
- I like to put a lot of chocolate chips in mine, but you can most certainly adjust the amount to suit your preferences, or leave them out completely.
