Sweet Potato Chips
- olive oil (for skillet or fryer) or vegetable oil (for skillet or fryer)
- 1 -2 large sweet potato, sliced into very thin medallions
- salt and pepper
- bleu cheese salad dressing, for dipping
- Slice sweet potatoes.
- Heat oil to about 350F.
- Cook in batches, about 4-5 minute first side, flip, cook 1-2 minutes more until golden brown- orange.
- Place on paper towels to drain off excess oil.
- Salt and pepper to taste each batch.
- Serve with Bleu cheese dressing for dipping!
