Beautiful Bell Rice
- 2 cup chicken broth
- 1 cup white or brown rice
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 Yellow bell pepper, chopped
- 2 tbsp butter
- In a medium sauce pan bring chicken broth to a boil, add rice, reduce heat to low and cover.
- Add butter to frying pan and lightly brown onion without burning the butter.
- Add seasoning to taste.
- Rice should be done after 20 minutes.
- Fluff with a fork and add browned onion.
- Brown the edges of your bell peppers on high heat and add to rice.
- Add coarsely chopped fresh parsley to rice and mix well.
- Serve warm with dinner or allow to cool and serve as a salad.
