Grandpa's Favorite Apple Pie
- 1 single crust pie (your favorite pastry)
- 1-1/2 lb. Golden Delicious apples, peeled, cored and sliced
- 1-1/2 lb. Granny Smith apples, peeled, cored and sliced
- 2 cups firmly packed brown sugar
- 1/4 cup cornstarch
- 3 tbsp. dark rum
- apple juice
- 1 tsp. cinnamon
- 1 cup chopped pecans
- 1/2 cup rolled quick oats (not instant)
- 1/2 cup flour
- 1 stick butter, melted
- Heat oven to 350F.
- Prepare pie pastry and fit into a 9-inch pie pan.
- Crimp edges and prick bottom and sides of crust with a fork.
- Bake 10 minutes.
- Remove to a wire rack.
- Filling: In a large bowl combine apples, 1 cup brown sugar, cornstarch, rum, and cinnamon.
- Mix well and spoon into partially baked pie shell.
- Combine remaining 1 cup brown sugar with the pecans, oats, flour and melted butter in a bowl and mix (mixture will be crumbly).
- Sprinkle evenly over apple mixture.
- Bake until top is golden brown and juices are bubbling, about 50 minutes.
- Serve warm.
