Grandpa's Favorite Apple Pie

  1. Heat oven to 350F.
  2. Prepare pie pastry and fit into a 9-inch pie pan.
  3. Crimp edges and prick bottom and sides of crust with a fork.
  4. Bake 10 minutes.
  5. Remove to a wire rack.
  6. Filling: In a large bowl combine apples, 1 cup brown sugar, cornstarch, rum, and cinnamon.
  7. Mix well and spoon into partially baked pie shell.
  8. Combine remaining 1 cup brown sugar with the pecans, oats, flour and melted butter in a bowl and mix (mixture will be crumbly).
  9. Sprinkle evenly over apple mixture.
  10. Bake until top is golden brown and juices are bubbling, about 50 minutes.
  11. Serve warm.
