Clam chowder
- 1 lb razor clams
- 2 large stalks celery
- 8 cup of cauliflower chopped
- 1 cup petite baby carrots
- 28 oz coconut milk
- 1/2 tsp salt
- 1 stick butter
- 1/4 tsp ground black pepper
- 2 tbsp thyme oil, see attached recipe
- 1/4 lb bacon
- 2 tbsp chopped parsley
- 1/4 cup grated parmesan cheese
- 1 large onions
- Clean and steam the clams remove from shells.
- Chop the onions, cauliflower, carrots, celery, and bacon saute them in thyme oil and half of butter.
- Till bacon is done.
- Drain excessive oil.
- Add coconut milk to the onion mixture.
- Add the rest of ingredients
- Simmer and stir occasionally.
- Let thicken.
- Serve hope you enjoy!
