Cheese and Salad Pizza
- 1 tbsp. olive oil
- 1 lb. fresh or frozen (thawed) pizza dough
- 1 c. part-skim ricotta cheese
- 1/2 c. shredded part-skim mozzarella cheese
- 1/4 c. freshly grated Pecorino Romano cheese
- salt
- Pepper
- 1 pt. cherry or grape tomatoes
- 1/4 c. fresh basil leaves
- Preheat oven to 450 degrees F. Grease 15 1/2-inch by 10 1/2-inch jelly-roll pan with 1 tablespoon olive oil.
- With fingers, pat dough onto bottom and up sides of pan.
- Spread ricotta on dough; sprinkle with mozzarella, Romano, and 1/4 teaspoon each salt and freshly ground black pepper.
- Place pan on rack in lower third of oven.
- Bake pizza 20 minutes or until hot and bubbly and crust is browned.
- Top with tomatoes and basil to serve.
