Fabulous Coconut Coffee Layer Cake

  1. Prepare cake batter and bake as directed on package for 2 (9-inch) round layers, substituting coffee for the water.
  2. Cool cakes in pans 10 min.
  3. Remove from pans to wire racks; cool completely.
  4. Mix sour cream, sugar and vanilla in large bowl until blended.
  5. Add coconut; mix well.
  6. Gently stir in COOL WHIP.
  7. Stack cake layers on plate, filling and frosting with COOL WHIP mixture.
