Feta & Rosemary Lemon Pasta Salad
- 1 tsp. dried rosemary leaves, ground
- 2 tsp. extra virgin olive oil
- 1 Tbsp. lemon juice
- 1 tsp. granulated sugar
- 1/4 cup ATHENOS Crumbled Reduced Fat Feta Cheese
- 1 cup snow pea pods, trimmed
- 5 cherry tomatoes, sliced in half
- 1/4 medium red onion, minced
- 1-1/2 oz. rotini pasta, uncooked
- 2 cups chopped romaine lettuce
- 5 large fresh strawberries, sliced
- 8 fl oz (1 cup) COUNTRY TIME Lemonade Flavor Sugar Free Drink Mix
- Blend rosemary, olive oil, lemon juice, and sugar in small bowl.
- Combine feta cheese, pea pods, tomatoes and onions in separate medium-sized bowl.
- Cook pasta per package instructions; drain but do not rinse.
- Place immediately in bowl with olive oil mixture; fold gently.
- Pour pasta mixture over feta and vegetables; fold.
- Arrange lettuce on dinner plate; top with pasta salad.
- Serve at room temperature for best flavor.
- Enjoy a dish of sliced strawberries for dessert.
- Serve meal with a glass of COUNTRY TIME Lemonade.
