Salmon Salad
- 1/3 cup Red pepper, diced
- 1/3 cup Cucumber, diced
- 1/4 cup Red onion, diced
- 1/3 cup Shredded carrots
- 1 large Hard boiled egg, Peeled and crushed
- 4 oz Salmon filet (cooked)
- 2 tbsp Mayonnaise (or miracle whip)
- 1 Lemon juice
- 1 Salt and pepper
- 1 dash Cayenne pepper seasoning
- Cook salmon as directed on package.
- Flake pieces and let it cool.
- In a large bowl, combine red peppers, cucumbers, onions, carrots, mayonnaise, salt and pepper.
- Add a dash of cayenne pepper if desired.
- Add cooked salmon and crushed boiled egg to bowl and mix gently.
- Add lemon juice to taste.
- Can be served as is, on a sandwich or over some leafy greens :)
- This is just a simple salad recipe, add, leave out and modify ingredients to your liking!!!
