Connies Apple Cake Recipe
- 2 cups sugar
- 3 cups flour (plain)
- 1 cup pecans (chopped)
- 4 cups Red Delicious apples (diced)
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1 12 cups canola oil
- 1 teaspoon vanilla extract
- 2 eggs, beaten
- PREHEAT OVEN TO 350 DEGREES:.
- Mix all dry ingredients with Chopped Apples.
- Add Canola Oil, (I make this at least 3 times a year and YES you put in 1 and one half cups of canola oil, this is a correct measurement), Vanilla Extract and beaten Eggs.
- Mix well.
- Batter will be stiff and a bit difficult to mix, but it is totally worth it!
- Bake approximately 1 1/2 hours in lightly greased (10 x 14 ) pan.
- Start checking cake after about an hour, since everyone's stove heats a little differently.
- You can use a toothpick or whatever you usually do to check your baking.
- Option: Of course you can make this in a muffin pan too but you would have to adjust the cooking time.
