Chinese-style Salad with Carrot and Enoki Mushrooms

  1. Take the roots ends off the enoki mushrooms, and shred.
  2. Microwave for 1 1/2 minutes.
  3. Finely julienne the carrot using a vegetable slicer (if using a knife, slice thinly as possible).
  4. Sprinkle with salt and leave for a while.
  5. Squeeze to remove excess water.
  6. Mix the enoki mushrooms and carrot with the ingredients.
  7. Chill very well before serving.
