Saltimbocas

  1. Flatten veal scallops and ham strips with a meat tenderizer or rolling pin; cut veal and ham strips in half.
  2. On top of each piece of veal, place a strip of ham and one sage leaf Keep in place with a toothpick.
  3. Cook flat on the plancha for 4 to 5 minutes on each side.
  4. Season with salt and pepper then serve.
  5. Serving Suggestion: This goes well with spicy tomato sauce.
