Egg Potato Curry
- 6 Eggs
- 2 Medium sized Potatoes
- 2 Onions (in paste)
- 1 tsp Garlic paste
- 1 tsp Ginger paste
- 2 Tomatoes (paste)
- 1 tbsp Coriander Powder
- 1 tsp Cumin powder
- 1 tsp Turmeric powder
- 1 tsp Red chilli powder
- 1/4 tsp Garam Masala
- 2 tbsp Cilantro for garnishing (chopped)
- 4 tbsp Vegetable Oil
- 1 Bay leaf
- Boil eggs
- De shell eggs n make one or two cut in eggs in opposite sides.. ..
- This process help to absorb spices into egg.
- Cut potatoes into cubes not very small in size, wash them.
- Take a heavy bottom woke, heat two tbs oil, Now fry cubes potatoes till light brown.
- Keep aside.
- Now fry eggs.. Sprinkle lil bit salt.. till light brown, keep aside.
- Now add remaining two tbs oil.. Heat, temper one Bay leaf, add onion, garlic, ginger paste, fry for two in high flame, add tomato paste.. Stir continuously.. B careful.. Should not burn.
- Add all dry spices except garam masala.. Fry till spices start to release oil.
- Add fried potatoes, mix well, add one glass water, do flame medium.
- Cook with lid till potatoes gets tender.
- Open the lid.. Add eggs, if u need more gravy add half cup water, cook for five-minute.
- Now off gas oven.
- Sprinkle garam masala, cover the lid.
- Keep it for five-minute.
- Open lid.. Sprinkle cilantro.
- Serve with hot steamed rice or bread.
