Grilled Chicken Bites

  1. Prepare a grill or griddle pan with cooking spray.
  2. On a clean work surface, take 2 sheets of waxed paper or plastic wrap and place chicken breasts in between sheets.
  3. Pound chicken with a mallet or rolling pin until even in thickness.
  4. Add seasonings on both sides.
  5. Cook for 67 minutes each side, or until juices run clear.
  6. Allow to rest for 5 minutes, then cut into bite size pieces.
  7. Transfer to a serving platter.
  8. Have your dipping sauces ready (see note below) in small ramekins and enjoy!
  9. I usually prepare sauces ahead of time and refrigerate until ready to serve.
  10. I frequently serve these at our get-togethers and it is really delicious and fun!
