Grilled yellowtail
- 6 pieces of yellowtail
- 5 clove garlic thinly sliced
- 5 clove garlic minced
- 4 tsp fish spice (I use robertsons spice for fish)
- 4 tsp lemon pepper
- 1 salt to taste
- 1 onion sliced
- 1 green pepper sliced
- 100 grams butter
- 6 spriggs of thyme
- Preheat oven to 220C
- Line a oven pan with tinfoil
- Brush melted butter (40 grams) on tinfoil and add the sliced garlic
- Mix together the spices, season fish on skin side with half of the spices and place skin down in oven pan
- Melt remainder of butter, mix with minced garlic and brush on fish
- Season the fish with the remainder of the spices
- Place the onions on top of the fish followed by the green pepper and finished with the thyme
- Cover with tinfoil and put in oven for 30 minutes
- Remove from oven.
- Turn oven onto grill only
- Remove the top tinfoil and put the fish back into the oven for 7 minutes
