Manicotti With Spinach And Cheese Crepes(12 Entree Crepes)
- 2 (10 oz.) pkg. frozen chopped spianch, thawed and squeezed free of all liquid
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1/2 tsp. nutmeg
- 2 c. (1 lb.) Ricotta cheese or low-fat cottage cheese
- 2 eggs
- 2 1/2 c. shredded Jack cheese
- 1/2 c. grated Parmesan cheese
- Put spinach in mixing bowl with salt, pepper, garlic powder, onion powder, nutmeg, Ricotta cheese, eggs, 1 1/2 cups Jack cheese and Parmesan cheese.
- Stir to mix well.
- Divide mixture
- evenly among crepes and roll up.
- Place crepes in a single layer in greased shallow baking dish.
- Cover with foil.
- Dish can be refrigerated at this point.
- Before serving, bake in 375u0b0 oven for 15 to 20 minutes or until thoroughly heated.
- Remove foil and sprinkle with remaining Jack cheese.
- Bake, uncovered, 5 minutes more or until cheese has melted.
