Ann's Carrot Cake Recipe
- 1 1/2 c. all-purpose flour
- 1 c. sugar
- 1 tsp baking soda
- 1 tsp baking pwdr
- 1 tsp cinnamon
- 1/2 tsp salt
- 2/3 c. vegetable oil
- 2 x Large eggs
- 1 c. grated carrots
- 8 ounce crushed pineapple in juice liquid removed
- 1 tsp vanilla extract
- 2 Tbsp. margarine -- softened
- 3 ounce cream cheese -- softened
- 1 tsp vanilla extract
- 1 lb powdered sugar
- 1/2 c. pecans -- minced
- Cake: Mix dry ingredients, then add in the remaining ingredients.
- Bake in a greased floured 9x13" pan at 350 F for 35 min.
- Frosting: Whip margarine, cream cheese and vanilla together; blend in powdered sugar.
- Stir in pecan pcs.
