Creamed Shrimp And Artichoke Bottoms Recipe
- 4 1/2 tbsp. butter
- 4 1/2 tbsp. flour
- 1/2 c. lowfat milk
- 3/4 c. whipping cream
- 1/4 c. dry vermouth
- 1 tbsp. Worcestershire sauce
- 1 1/2 lbs. cooked shrimp
- 2 (No. 2) cans artichoke bottoms
- 1/4 c. Parmesan cheese
- Heat butter and stir in flour.
- Gradually add in lowfat milk and cream.
- When smooth, season with salt and pepper.
- Add in vermouth to cream sauce and also add in Worcestershire.
- Combine with shrimp and artichoke bottoms.
- Heat through.
- Pour into chafing dish; sprinkle with Parmesan cheese and serve with toast rounds.
- Serves 50.
