Smoked Chicken, Lime and Coriander Quiche

  1. Mix Philly* with a spoon until smooth.
  2. Whisk in eggs, half of cheese, cream, coriander and lime juice and zest.
  3. Saute red onion for 2 minutes until translucent.
  4. Add spinach, chicken and red pepper, stir until just heated through.
  5. Spoon chicken mix into the base of a 10 x 20cm baking dish.
  6. Pour Philly* custard over the top.
  7. Sprinkle with remaining cheese.
  8. Bake at 180C for 30 minutes or until just set.
  9. Serve warm or cold.
