Smoked Chicken, Lime and Coriander Quiche
- 125g block PHILADELPHIA Light Cream Cheese, softened
- 7 eggs, lightly beaten
- 1 cup grated tasty cheese
- 1/2 cup cream
- 1/4 cup chopped coriander
- 1 tablespoon lime juice Safeway 3 ct For $1.00 thru 02/09
- zest of 1/2 lime Safeway 3 ct For $1.00 thru 02/09
- 1 small red onion, sliced
- 2 cups (70g) spinach leaves
- 300g smoked chicken, cut into chunks
- 1/2 roasted red capsicum, thinly sliced
- Mix Philly* with a spoon until smooth.
- Whisk in eggs, half of cheese, cream, coriander and lime juice and zest.
- Saute red onion for 2 minutes until translucent.
- Add spinach, chicken and red pepper, stir until just heated through.
- Spoon chicken mix into the base of a 10 x 20cm baking dish.
- Pour Philly* custard over the top.
- Sprinkle with remaining cheese.
- Bake at 180C for 30 minutes or until just set.
- Serve warm or cold.
