Pruffins

  1. Grease 12 muffin cups or line with paper liners; set aside.
  2. Preheat oven to 375 degrees.
  3. In a large bowl, combine cereal and milk.
  4. Let stand 15 minutes, or til most of milk is absorbed.
  5. Beat in egg, oil, sourdough starter and honey.
  6. In a small bowl, stir together flour, baking powder and salt.
  7. Stir into sourdough mixture until dry ingredients are just moistened.
  8. Spoon 1/2 teaspoon melted butter into each prepared muffin cup.
  9. Add 1 teaspoon brown sugar and 1 prune to each muffin cup.
  10. Fill cups 2/3 to 3/4 full with batter.
  11. Bake 18 to 25 minutes or til tops are golden brown.
  12. Place a rack over top of cooked muffins.
  13. Invert rack and muffin pan.
  14. Remove pan.
  15. makes 18 to 25 muffins.
