Parmesan Smashed Potatoes

  1. Cook potatoes in boiling water in large saucepan 30 to 35 min.
  2. or until done; drain.
  3. Heat oven to 400 degrees F. Cover baking sheet with parchment or foil; spray with cooking spray.
  4. Place potatoes, 4 inches apart, on prepared baking sheet.
  5. Flatten with back of spatula to 1/2-inch thickness.
  6. Combine dressing and cheese in small bowl.
  7. Add potatoes, 1 at a time; turn to evenly coat both sides of each potato with dressing mixture.
  8. Bake 25 to 30 min.
  9. or until crisp and golden brown.
