Parmesan Smashed Potatoes
- 12 red new potatoes (1-3/4 lb.) King Sooper's 5 lb For $1.88 thru 02/09
- 1/2 cup KRAFT Balsamic Vinaigrette Dressing
- 6 Tbsp. KRAFT Grated Parmesan Cheese
- Cook potatoes in boiling water in large saucepan 30 to 35 min.
- or until done; drain.
- Heat oven to 400 degrees F. Cover baking sheet with parchment or foil; spray with cooking spray.
- Place potatoes, 4 inches apart, on prepared baking sheet.
- Flatten with back of spatula to 1/2-inch thickness.
- Combine dressing and cheese in small bowl.
- Add potatoes, 1 at a time; turn to evenly coat both sides of each potato with dressing mixture.
- Bake 25 to 30 min.
