Salmon Cakes Recipe
- 1 (15 1/2 ounce.) can pink salmon (bones, skin, dark flesh & water removed)
- 4 lg. potatoes, peeled & cut
- Black pepper to taste
- Onion pwdr to taste
- Garlic pwdr to taste
- 1 med. onion, minced fine
- 1 egg
- Flavored bread crumbs
- Butter for frying
- Flake salmon in a large bowl and set aside.
- Boil potatoes till soft.
- Drain and mash adding onion pwdr, garlic pwdr and salt if you like.
- Add in onion, whole egg and sufficient bread crumbs to absorb egg.
- Add in the salmon to this and mix very well to proportionately distribute the salmon.
- Form into patties 1/4" thick and 1" round.
- Pat each salmon cake into bread crumbs.
- Fry over medium heat in butter till dark brown, turning frequently.
