Sausage Stuffed Pork Roast Recipe

  1. Have butcher cut pockets in roast (about 6).
  2. Brown sausage and drain.
  3. Add in onion and garlic.
  4. Combine with egg, stuffing mix, Parmesan cheese, spinach and broth.
  5. Add in sufficient broth to hold mix together.
  6. Put about 1/3 c. mix into each pocket of roast.
  7. Tie to retain shape.
  8. Place roast, fat side up, in open roasting pan.
  9. Roast at 325 degrees for 2 to 2 1/2 hrs.
  10. Cover loosely with foil after first hour.
  11. Cook till thermometer registers 170 degrees.
  12. Heat remaining stuffing in covered dish during last 30 min.
